I love sharing with you new allergy-friendly products that I find. And I get really excited when it involves chocolate! (who doesn’t?)

Nobody thinks of chocolate as being a major source of food allergies, but read the back of most chocolate bars and see the declarations of trace elements. More often than not, 5 or 6 of the big 8 allergens (dairy, egg, peanut, tree nut, fish, shellfish, wheat/gluten, soy) are ingredients.

Have you heard of PASCHA Chocolate?   Their chocolate is free of the top 8 allergens and absolutely amazing!

Pascha’s mission is “to make the purest, safest chocolate without any allergenic ingredients.” Not only have they accomplished that, they have also managed to create chocolate products that taste delightful.

PASCHA makes both chocolate bars and chocolate chips, all of which are organic, and hit a home run in my book. It’s also vegan, kosher, non-GMO verified and free from any additives.IMG_0420

The unique range of 8 bars – from 55% to 85% cacao – are innovative and have beautifully balanced flavor and pure chocolate taste.

  • 55% cacao
  • 55% cacao with cocoa nibs
  • 55% cacao with goldenberries
  • 60% cacao with maca
  • 70% cacao
  • 70% cacao With Arabica coffee
  • 70% cacao with Lucuma
  • 85% cacao

By consuming PASCHA dark chocolate, no matter what variety, you will inevitably get loads of healthy antioxidants from the healthy dark chocolate. :) Even more reasons to eat chocolate!

I tried the 70% cacao, created with fine aroma cocoa beans from Peru. PASCHA Chocolate is a full bodied dark chocolate with a smooth and not too intense taste. This luscious bittersweet chocolate is an indulgence you can feel good about eating.

PASCHA also offers their chocolate in the form of chocolate chips!   They have three varieties and you can’t go wrong with any of them.

  • 55% Semi-Sweet Dark Chocolate Chips
  • 85% Bittersweet Dark Chocolate Chips
  • 100% Unsweetened Dark Chocolate Baking Chips

Not only are these chocolate chips the perfect bite size morsels to snack on, but they are great for baking.

I used the 55% Semi-Sweet Dark Chocolate Chips to make my favorite Chocolate Chip Pumpkin Cookies. They were so good that before I could even snap photos, Jeremy had already eaten a few cookies.

I plan on using a the 85% Bittersweet Dark Chocolate Chips to make Chocolate Covered Matzo for Passover next month.

I've been on a gluten free diet since January 2009. It's been an adventure, and a challenge at times. I love to go to new restaurants and try new foods, and being gluten free can make eating out difficult at times. But I will not let my dietary restrictions get in my way of finding new restaurants and products. These are my stories of being a young women in a big city, eating out and trying new foods, all while NOT eating gluten. Like I said, it's an adventure and you are welcome to come along... Please note that as I try to eat gluten free 100% of the time, my intolerance is not as severe as others so please use caution when dining at restaurants that are not certified gluten free.

  1. Dark Chocolate is my favorite – added bonus – no one else in my family likes it, so I don’t have to share. I would have never thought of covering matzo with it, thanks for that idea.
