Grain-Free JK Gourmet’s Almond Flour

JK Gourmet’s blanched almond flour is super-finely ground and makes gluten-free baking quick and easy. This almond flour is gluten-free and its powder-fine texture makes your pie crusts, cakes, cookies, brownies, and muffins taste delicious and authentic, just like they’re supposed to taste.  It can also be added to baked recipes to add more protein and less carbs. If replace almond flour with regular flour in a recipe, start with replacing only 1/4 cup. Or find a gluten free almond flour recipe and you don’t have to use any other flour! Below, is a delicious chocolate chip coconut recipe I made with my sister over the weekend.

Ingredients
  1. 1/4 brown sugar
  2. 1/2 teaspoon baking soda
  3. 1/4 teaspoon salt
  4. 2 tablespoons butter, at room temperature
  5. 2 teaspoons Boyajian coconut flavor (or 2 teaspoons vanilla extract)
  6. 1 large egg
  7. 2 cups JK Gourmet Almond Flour
  8. 1/2 cup chocolate chips
  9. 1/3 cup coconut flakes
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease a baking sheet, or line with parchment paper.
  2. Combine the sugar, baking soda, salt, and butter, and mix until smooth.
  3. Mix in the vanilla, egg, and almond flour, stirring to combine.
  4. Stir in the chocolate chips and coconut flakes.
  5. Scoop 1 tablespoon-sized balls onto the prepared baking sheet. Gently flatten to cookies to about 3/8-inch thick.
  6. Bake for 10-13 minutes, until golden brown.

Jennie-O® All Natural Turkey Breast Tenderloin & Sun Dried Tomato Turkey Breast // Back to School Ideas

It’s that time of year again! With new routines and back to school, meal planning is an easy way to eat well and stay ahead of busy schedules. From the grill to the oven to the slow cooker, a JENNIE-O® All Natural Turkey Breast Tenderloin is an easy meal the whole family will love and is great for making week night meals easy and tasty! Plus, it’s 99% Fat Free and doesn’t contain gluten. 

TO GRILL: Preheat grill over medium heat, place tenderloins directly on grate. Grill, turning occasionally, until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 45-50 minutes. Remove from heat, cover and let rest 5-10 minutes before slicing. 

TO BAKE: Preheat oven to 350°F. Place tenderloins in a shallow baking pan. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 60-70 minutes. Remove from heat, cover and let rest 5-10 minutes before slicing. 

SLOW COOKER: Peel back and remove packaging. Place tenderloins (two in each packet) in slow cooker, add ½ cup water, and cover with lid. Cook according to chart below AND until internal temperature reaches 165°F. as measured by a meat thermometer. Remove and serve. Slow cookers may vary in cooking performance.

Gluten Free Options at Ocean Prime // Boston Seaport

Ocean Prime, a high-end seafood and steak restaurant based in Columbus Ohio, opened it’s 12th location in Boston’s Seaport this past December. Ocean Prime specializes in a variety of seafood dishes, meats, and cocktails, and it also offers a gluten-free menu.

Last week I went to check out the gluten free lunch menu and I was impressed with the number of options it offers. Ocean Prime also offers a lunch menu.

The Lavender Citrus Soda is a refreshing summer drink.

For appetizers, we shared the Surf and Turf Sea Scallops and Slow Braised Short Ribs, which just melted in my mouth.

For our entrees we shared the Petite Filet Mignon and Chilean Sea Bass with a side of corn salad.

In addition to this menu, some of the items on the regular lunch menu can be prepared gluten free with modifications, including sushi – Lobster roll, Tuna roll and Hamachi Crudo – and entree salads – Blackened Salmon Salad, Ahi Tuna Salad, Crab Wedge and Flat Iron Steak Salad.

The service is top notch, as is the quality of the food. Ocean Prime is open for lunch Monday – Friday and dinner is served seven days a week.

Mrs. Renfro’s NEW Pumpkin Salsa

One of my favorite things about the fall is pumpkin! I love baking and cooking with it – banana pumpkin bread, pumpkin cookies, pumpkin hummus, pumpkin chili, pumpkin soup, pumpkin pancakes, and pumpkin pie, just to name a few. But I’ve never had a pumpkin salsa before! I was intrigued. 

It’s Thanksgiving on a chip! A few years ago I was introduced to Boyajian, a line of fine oils and vinegars based in Canton, MA. Olive oil is a staple ingredient in my kitchen. It some how ends up making its way into almost everything I cook and therefore I only use high quality oils. One of the many reasons I love Boyajian oils is that they are all natural, pure, gluten free, nonGMO and vegan. 

For more than 25 years, Boyajian has been making gourmet all-natural infused olive oils, vinegars, vinaigrette, Asian oils, citrus oils, natural flavorings and extracts. All made with real herbs and spices.

Although I’ve been using the infused oils and vinegars for years, this was the firs time I tried Boyajian’s line of Baking Essentials. The all-natural citrus oils, flavorings and extracts add a new dimension to cooking, baking, candy making, ice cream making and much more. The citrus oils are natural essences that are cold pressed from the rind of the fruit. Extracts and flavorings don’t come close to the remarkable intensity of these oils. It takes approximately 150 oranges, 225 lemons, or 273 limes to fill a 3.4 oz bottle. These oils should be used sparingly in place of zest or peel. The Flavors of Ernest Hemingway

The Flavors of Hemingway aka EH Gourmet is a line of gourmet sauces and seasonings based on the life and travels of prolific American novelist Ernest Hemingway.

THE TROPICAL SEA SALT
Inspired by Hemingway’s residence in Havana, Cuba.
It was at Finca Vigía (Hemingway’s residence in Cuba from mid 1939 to 1960) that he wrote much of For Whom the Bell Tolls and The Old Man and the Sea. The classic tale tells the story of an old fisherman pursuing a giant marlin in the waters off Havana. This sea salt boasts a gourmet combination of imported sea salt, granulized garlic, and a hint of lemon and lime zest. 

THE BULL HOT SAUCE
Inspired by Hemingway’s travels to Pamplona, Spain.
Hemingway became enamored with Spanish bullfighting after seeing the Pamplona fiesta in 1925, which he wrote about in The Sun Also Rises. A few years later, in the summer of 1929, he traveled to Spain again in research of Death in the Afternoon, which was a much more detailed exploration into the tradition and ceremony of Spanish bullfighting. The sauce starts with a tangy sweetness and finishes with a spicy kick. Its heat comes from a combination of chili peppers and Spanish paprika. Splash it on anything needs a lil’ kick from wings to eggs, even just a gluten free cracker.
